A dense bread with and intense flavor. Gluten free and highly digestible.
The loafs are quite small but is a very filling bread. Although it has a lot of fiber, buckwheat does not especially help intestinal transit (it does not impair it either).
We sell it by weight. Since it is a quite unique bread and hard to find in other bakeries our customers who live far away buy more than one piece and keep them in the frezer.
INFORMATION ABOUT INGREDIENTS:
Organic whole grain buckwheat flour (75%).
Rice flour and sourdough (25%).
Xanthan gum (that substitutes gluten).
It does not contain gluten, but there will always be traces of the other products that we make in our workroom. Therefore it is not suitable for people with celiac disease.
